Bread mostly doesn’t go stale by drying out. The starch slowly recrystallises, packing itself back into order, and order is what hard feels like. Warm it and the order melts, and the bread is soft again for a while. I find it oddly comforting that the cure for going stale is a little heat and a little disorder.
